Spinach and Feta Stuffed-Chicken

  • 4-5 chicken breasts
  • 1 pkg. frozen, chopped spinach, thawed and drained of excess liquid
  • 8 oz feta cheese, crumbled
  • 2-3 strips of bacon per chicken breast
  • paprika
  • pepper
  • toothpicks

  1. Combine spinach with feta and pepper to taste.
  2. Slice chicken breasts down the middle to form a pocket (you could also pound them out)
  3. Stuff chicken with filling and seal up with 2-3 tooth picks
  4. Wrap 2-3 pieces of bacon around chicken
  5. Sprinkle with paprika
  6. Bake on 325 for one hour or until juices run clean on chicken

One of my favourite meals is chicken stuffed with feta and asparagus and then rolled in polenta. Next time i'll make this because it looks really yum and i love spinach - thanks.
